Strawberry and Almond Chia Pudding

 

Ingredients

  • 4 tbsps Chia Seeds
  • 4 tbsps Ground Flaxseeds
  • 1 cup Unsweetened Almond Milk
  • 1 tsp Vanilla Extract
  • 4 tbsps Sunflower Seed Butter or Almond Butter
  • 3/4 cup Strawberries (chopped)
  • 2 tbsps Almonds (chopped)
  • 2 tbsps Raw Cacao Nibs
  • Fresh Mint Sprigs to garnish

Directions

  • In a bowl, stir together the chia seeds, flax seeds, almond milk, nut butter. Refrigerate for at least two hours or until chilled and the chia seeds have set.
  • Serve the chia pudding topped with strawberries, almonds, raw cacao nibs and garnish with the mint springs. Enjoy!

Notes

  • Serves 2 - Time 2 hours
  • Leftovers or extras - Refrigerate in an airtight container for up to four days.
  • Serving Size - One serving is approximately 1 1/4 cups.
  • More Flavour - Add maple syrup and/or add cinnamon.
  • No Almond Milk - Use any other milks of your choice.
