Coconut and Lime Chicken Stir Fry

 

Ingredients

  • 2 tsps Coconut oil
  • 500 gms Chicken Breast (boneless, skinless)
  • 1 bunch of Broccolini (chopped in half)
  • 1 bunch of Bok Choy (chopped in half)
  • 1 cup Bean Shoots
  • Sea Salt and Black Pepper (to taste)
  • 2 tbs Garlic Infused Olive Oil
  • 1 tsp Chilli flakes
  • 1 can Coconut Milk
  • 2 limes (juiced, sliced)
  • 1/2 cup Coriander 

Directions

  1. Heat the oil in a pan over medium heat. Season the chicken with salt and pepper. Add the chicken to the pan and cook for two to three minutes on each side or until browned.
  2. Add the garlic infused olive oil, chilli flakes and coconut milk. Bring to simmer, cover the pan with a lid, and simmer over medium-low heat for about 10 minutes.
  3. Remove the lid and add in the broccolini and lime juice and cover for 5 minutes. Add the Bok choy and bean shoots and mix until sauce is covering the ingredients. Taste and adjust the seasoning to your taste.
  4. Slice the chicken breast into pieces. 
  5. Top with coriander and garnish with lime slices. 
  6. Dish into 4 separate bowls - Enjoy!

 

Notes - Serves 4 - Cooking Time - 25 minutes

Extras - Add rice noodles or Slendier (Keto) noodles as a base if you are wanting extra bulk in the meal.

Additional toppings - sliced shallots or parsley or fresh chilli
