Coconut and Lime Chicken Stir Fry

Ingredients
- 2 tsps Coconut oil
 - 500 gms Chicken Breast (boneless, skinless)
 - 1 bunch of Broccolini (chopped in half)
 - 1 bunch of Bok Choy (chopped in half)
 - 1 cup Bean Shoots
 - Sea Salt and Black Pepper (to taste)
 - 2 tbs Garlic Infused Olive Oil
 - 1 tsp Chilli flakes
 - 1 can Coconut Milk
 - 2 limes (juiced, sliced)
 - 1/2 cup Coriander
 
Directions
- Heat the oil in a pan over medium heat. Season the chicken with salt and pepper. Add the chicken to the pan and cook for two to three minutes on each side or until browned.
 - Add the garlic infused olive oil, chilli flakes and coconut milk. Bring to simmer, cover the pan with a lid, and simmer over medium-low heat for about 10 minutes.
 - Remove the lid and add in the broccolini and lime juice and cover for 5 minutes. Add the Bok choy and bean shoots and mix until sauce is covering the ingredients. Taste and adjust the seasoning to your taste.
 - Slice the chicken breast into pieces.
 - Top with coriander and garnish with lime slices.
 - Dish into 4 separate bowls - Enjoy!
 
Notes - Serves 4 - Cooking Time - 25 minutes
Extras - Add rice noodles or Slendier (Keto) noodles as a base if you are wanting extra bulk in the meal.
