Baked Salmon and Rainbow Veggies
Ingredients
- 2 cups Cherry Tomatoes
- 250 gms Salmon Fillet
- 1 Yellow Capsicum or Yellow Cherry Tomatoes
- 1/2 cup Red Onion (sliced into chunks) or
- 1 small Eggplant (SIBO Biphasic Diet) sliced into chunks
- 1 Zucchini sliced and rolled
- 2 tbsps Extra Virgin Olive Oil
- 1 1/2 tsps Coconut Aminos
- 1/2 Navel Orange (zested and juiced)
- 1 Lemon cut into quarters
- Sea Salt and Black Pepper to taste
- 1/2 cup fresh Parsley
Directions
- Preheat oven to 190 degrees and coat a baking dish with olive oil.
- Place the cherry tomatoes, salmon, capsicum, zucchini, lemon and red onion on the baking tray. Drizzle the vegetables with olive oil. Brush the salmon with the coconut aminos, orange juice and zest. Sprinkle salt and pepper over the ingredients.
- Place in the oven and bake for 30 minutes, or until salmon is fully cooked.
- Divide between plates, add parsley and enjoy.
Notes - Serves 2 - 40 minutes
Vegan - Use tofu steaks or roasted chickpeas instead of salmon.
SIBO Biphasic - replace onion with eggplant cut into cubes/chunks.
